A Cupcake Celebration!

These days, there is a renewed appreciation for baking from scratch, stepping away from the pre-packaged, preservative-packed mixes that have been so popular since the 1960s. Why not work with your child to create a birthday cake from scratch? Or better yet, make homemade birthday cupcakes. Remember, you don’t have to be the “Ace of Cakes” to create fun memories and have a yummy treat to show for it.


Delicious Vanilla Cupcakes


  • 2 cups flour (sifted)
  • 1/2 tsp. salt 
  • 2 tsp. baking powder 
  • 1/2 cup butter 
  • 1 cup sugar 
  • 2 eggs
  • 1/2 cup milk
  • 1 1/2  tsp. vanilla extract



Preheat oven to 375F. Line two 12-muffin pans with cupcake paper liners. In a large bowl mix sifted flour, salt and baking powder.


In another bowl cream butter and sugar together until light and fluffy. Add beaten eggs, vanilla and milk. Mix well. Fill cupcake liners 3/4 full. Bake approximately 15-20 minutes until baked through or until tops of cupcakes spring back when lightly pressed. Cool for one minute before removing from pan to cool completely before frosting.  


Yield : 24 cupcakes


Butter Cream Icing


  • 5 oz. real butter – softened
  • 8 oz. confectioners (powdered) sugar
  • 2 tsp. warm milk or water



Beat together the butter and sugar with an electric beater. Once well combined, add the liquid. Beat until smooth and creamy. You can add food coloring to create different colors.


Makes three cups.
