Grandma’s Tacos

Serves 4 – with seconds!

My kids can’t get enough of Grandma’s old-school tacos. What I love most is that I typically have everything on hand needed to make this favorite dinner.



  • 1 lb. ground beef
  • 1 boiled potato cut into small chunks
  • Garlic salt and pepper
  • Corn tortillas
  • Cooking oil
  • Grated cheese, shredded lettuce, chopped tomatoes


Brown ground beef in frying pan. Add cooked and cut potatoes to meat. Mash up in the pan with a potato masher or a fork.  Add garlic salt and pepper to taste.  Then fry corn tortillas and shape into taco shells. Scoop meat and potato mixture into taco shells. Top with cheese, lettuce or tomato. (You can probably substitute a healthier taco shell for the fried one, but we do this just like Grandma does and it’s the best).
